Lately I've found my passion for cooking (someone else's is incharge of the cooking at my house so I never cooked much) so now everyday I always try something new. I never cooked much in my life, so if people ever asked me if I know how to, I will often say no, although I had done some meals before and they were eatable. So with this new passion, I'm proving myself and to the others I'm capable too!
I'll start by presenting you, my Macedonia Pancakes I did last monday morning! It's a fantastic and yummy way to start the week, just what we need on a monday, right? It will make you smile from ear to ear from early in the morning and is perfect with a cup of coffee or tea (for our english friends! I must be honest I love it too!). I've been thinking but why not acompanny it also with a smoothie, or milkshake? Your choice! What's important is that you love what you cooking!
Because I'm unemployed (sadly...) I often find myself having breakfast alone, so I searched for a recipe that was appropriated for a "forvever alone" person like me! :D
I also changed it a bit, based in some traditional recipes, and Benedetta Parodi's recipe of Strawberry Pancakes (you can find here: http://www.realtimetv.it/web/molto-bene/ricette-meno-30-minuti/dolci-30/pancakes-alle-fragole/). So here it goes:
Ingredients for one person (It resulted into two medium sized pancakes for me because I didn't add all the milk):
- 75 g of flour (I used all purpose white flour)
- 75 ml of milk (I used cool milk, but I think it's better if you use it at ambient temperature. Also I didn't use all milk, the reason why I'll explain down bellow)
- 1 egg (Again I used a cool egg, but I dont think it matters)
- half a tablespoon of sugar (I actually used more, so add it to your liking)
- half a tablespoon of melted butter (to melt, just place it a minute on the microwave)
- a pinch of salt (I used thin salt, feel free to use tick one if you have confidence with it)
- 1/4 of a teaspoon of vanilla baking powder (I just added due to the fact many do, and because I wanted to give it a little vanilla like flavour)
- Fruit Macedonia (which was done previously of course, you can add any other kind of fruit to your liking instead like strawberries, banana, if you don't really like fruit macedonia)
1. Let's start by taking a bowl, put the egg and stir it with the half tablespoon of sugar.
2. When done, add the flour and the milk alternating between the two, without stoping stiring, until you get a lighter omegenous liquid mixture.
I didn't add all the milk because I wasn't looking to have more than 2 pancakes (since I usually eat only one pancake anyway), so my mixture was more tick like, but feel free to add all of it if you would like.
3. After adding all the milk and the flour to the previous mixture, now
it's time to add the melted butter, and the vanilla baking powder.
4. To finish, add a pitch of salt to the mixture and stir it once again.
5. You are done preparing the mixture. The next thing you should do is heat a pan on medium heat and melt a small piece of butter in it (add always one more piece before you start making another pancake), that way the pancakes won't glue to the pan. Once is warm, with the help of a soup serving spoon (or any other spoon), place a small amount of mixture into the warm pan.
6. When you see small bubbles forming all over your pancake it means its time for you to turn it (I flipped my very first pancake here!!). Once its cooked on both sides, take it off and place it on plate. Now do the same with the rest of the mixture, once is all done, decorate with a bit of fruit macedonia. Voila!!
Suggestion: If you would like you can add the fruit macedonia, or any other fruit, to the mixture before cooking it on the pan, to have a more rich and fresh breakfast!
